Tabouleh
(authentic recipe)
Ingredients
3 medium
tomatoes; diced
3 scallons; diced
2 medium cucumbers; peeled & diced
1 large green bell pepper; diced
1 cup parsley; chopped finely
1 cup bulgur-medium (cracked wheat)
1 lemon; freshly squeezed)
1/4 cup olive oil
Preparation
Soak bulgur with 2 cups of water in a medium bowl
Let
it soak for 15 minutes. Drain excess water
Mix
lemon juice with olive oil in a separate small bowl
Add
lemon juice mixture to bowl with bulgur
Add
remaining ingredients; mix well
Salt
& pepper to taste
Fill
pocket & serve
