Shrimp
& Avocado Pockets
Ingredients
1 lb.
cooked shrimp; rinse & dry (small or medium size)
2 avocados; diced
3 Tbsp. olive oil
2 medium garlic cloves; minced
2 Tbsp. cilantro; chopped
2 Tbsp. lime juice
1 tsp. ground cumin
1 tsp. jalapeno sauce (optional)
Preparation
Whisk
limejuice, garlic, cumin, olive oil, jalapeno sauce and
cilantro
Place
avocado in mixture; let marinate for 5 minutes
Add
cooked shrimp; mix gently
Salt
& pepper to taste.
Fill
pocket & serve
